Born and educated in Seattle, with a BA in Marketing from the University of Washington, Aislinn’s culinary education and pursuits have taken her from the modern Irish kitchens of Galway to the Michelin-starred gardens of La Botica in Spain. At home in the Pacific Northwest, Aislinn attended the Seattle Culinary Academy while serving as a line cook for Tom Douglas Restaurants before making her mark as the Sous Chef at Seattle's iconic Matt’s in the Market.
In 2020 she co-founded the acclaimed pop-up bakery, Oso Negro, known for its artisanal alfajores. Most recently Aislinn served as Head Chef at Hedges Family Estate in Benton City, WA where she developed the winery’s food program, bridging the farm to table divide through organic gardening practices and raising regenerative chickens.
As Executive Chef at Marjorie, Aislinn is excited to channel her expertise connecting farms with culinary venues that champion low carbon, nutrient-dense offerings, reinforcing our commitment to a greener future and establishing Marjorie’s kitchen as a working model for sustainable agriculture and the slow food movement.

I have two, one who is no longer with us. Karen Jurgensen, who does so much work for our industry and community behind the scenes, shaping the future through culinary education and building/promoting more sustainable kitchens and how we can be more connected to our food systems. And Zen McManigal, who was an incredible architect, community leader and champion of the arts. He quietly left his mark all over his city and community, inspiring countless individuals. He gave me the tools and confidence to follow a career driven by passion.

I’m still a bit new to have a favorite memory but the way people speak about Marjorie and Donna is like nothing I've ever experienced before. Their eyes light up, they talk about all the special events they've celebrated there with their loved ones and go on to rave about what an incredible human Donna is. As I absorb all of those stories and the energy, Marjorie to me represents a place where people can feel joy, community, comfort and be genuinely cared for knowing they will leave with happy bellies and full hearts. It is a type of community that pulls you in and one that is harder and harder to find.
